It began in 1904, when the first generation planted their crops into the rich red basalt soil of Robertson. Five generations later, that same soil—paired with cool-climate air and the soft fog rolling in from the Illawarra escarpment—continues to shape every potato they grow. It’s a place where nature does its best work: warm days, cool nights, and rolling green hills lined with neat rows of thriving plants. Quietly, season by season, the land delivers something special.

For the Hill family, it’s never been about growing more—it’s about growing better. Flavour comes first. Always has. Each variety is chosen with care, each harvest guided by experience passed down through generations. Along the creek line, life continues in quieter ways too, with the critically endangered Fitzroy Falls Spiny Crayfish protected through ongoing revegetation and careful stewardship of the waterways.
